Gilli created and edited The Red Book, Eat Well in Wales. First published in 1997, this guide to the best places to eat in Wales was a great success leading to a future 2 editions being published in conjunction with The Western Mail.
Working with 12 inspectors, Gilli compiled this handy guide covering the whole of Wales, including all good food outlets from cafes and pubs to top class restaurants and hotels. Even youth hostels were included.
Since then Gilli has contributed to a variety of food guides and is recognised as a food judge from her experience working in the restaurant trade.
