Gilli has a wide experience of food production, catering and the hospitality industry which has lead to her consultancy work in these areas.
Regional Identity
Working with the Welsh food organisation, Welsh Food Promotions, Gilli consulted with the caterers of Wales to develop a regional identity to their menus.
Following this Gilli created a training scheme to encourage caterers to make the very best of local foods and traditional recipes.
Recipe Development
Gilli worked on new recipes ideas for Lamb with Welsh Lamb Enterprise.
In 1997, Gilli worked on the Cask Ale report of 1997 where she teamed recipe ideas with a range of cask ales, from serving a spicy Thai curry with a fresh hoppy lager to rich fruit cake accompanying a mild ale.
Education and Ideas
In 1999 Gilli joined a ‘think tank’ to help the newly appointed Welsh Assembly create a distinct brand of quality in Wales.
Working within the Education sectors, Gilli joined a team to develop secondary and post school education in Wales.
Advisory Committees
Following an appointment to sit on the newly formed Advisory Committee for Animal Feedstuffs, Gilli was invited to join the Advisory Board for the Food Standards Agency in Wales. Gilli has also been a member of the advisory committee for the Meat and Livestock Committee.
Gilli sits on the advisory committee of BioCop, as a consumer representative and also Foodaware, the consumer group.
Catering Consultancy
In 2005 Nevisport asked Gilli to restructure their catering business in Scotland.
Gilli has also worked with Brains Brewery to develop menu ideas.
As a judge Gilli has worked at a variety of Agricultural Shows, with the British Cheese Awards and the Taste Awards of 2007 at the Yorkshire Showground in Harrogate.
