Gilli has written a number of books on Welsh food: Lamb, Leeks and Laverbread; Tastes of Wales which accompanied her TV series of the same name: Down to Earth and A Taste of Wales; The Very Best Flavours of Wales and Welsh Calendar Cookbook which was published by Y Lolfa in 2007.
During her time in Wales she was commissioned to write on Welsh food for publications such as British Food Finds, which won the Andre Simon Memorial Award in 1987.Gilli also contributed to 2 Japanese cookbooks.
From her stay in Cyprus, Gilli researched and wrote a book about the cuisine and culinary culture of the Island, which is available in UK and Cyprus, published by Topline under the title, A Taste of Cyprus.
Gilli created and edited The Red Book, Eat Well in Wales. A guide to the best cafes, pubs, restaurants and cafes in Wales. With a team of 12 inspectors, who wrote freely of their experiences, this guide was a best seller and much missed when sponsorship was withdrawn in 2003 after the third edition.
The Joy of Organic Cookery was published by Metro in 2002 and based on Gilli’s knowledge of organic foods.
